14. Pho – Vietnam
Pho is a traditional noodle soup served everywhere in Vietnam. It became world famous after the Vietnam war, when refugees brought the recipe with them. It’s normally served with sriracha sauce, which is super spicy and made with chili, vinegar, and garlic.
It’s commonly served with beef or chicken, but you can also find vegetarian options using “fake meat” (seitan). Cinnamon, star anise, and toasted ginger are sometimes added to the broth, creating an interesting concoction of flavors and scents.
