Aloo Gobi
Aloo gobi is one of the most popular vegetarian dishes in India. It’s made of potato and cauliflower, and gets its characteristic yellow color from abundant turmeric. Good aloo gobi should be relatively dry – it shouldn’t look too over-fried, or contain too much excess oil. It’s usually served with naan, or the other incredibly popular Indian flatbread, roti.
