Biryani
The Indian rice dish biryani is so ubiquitous that it takes a lot of sleuthing to dig up its origins. Researchers agree that it came to India via Persia, since it closely resembles the Farsi word birian. Biryani at its heart is simply long-grain rice, fried to give it a toasted, nutty flavor, then cooked into a pilaf.
Like many different Indian dishes, the flavors of biryani depend on the region and the chef. There are so many varieties which can include anything from coconut and apricot to goat, green peppers, jackfruit, and everything in between. Lamb is the most popular meat addition.
