The World in Coffee

Turk Kahvesi – Turkey
In Turkey, coffee is prepared in a brass or copper pot called a cezve, and unlike many other types of coffee in the world, it is prepared by boiling the grounds in water.
The coffee grounds in the water are allowed to gently simmer, and when the coffee begins to produce froth, about a third of the volume of coffee is poured into individual serving cups. Then, the remainder is returned to the heat and allowed to simmer until it froths again, at which point each cup is topped off with this stronger coffee.
