5. Smalahove – Norway
If you’re traveling to Norway during the Christmas season, you should be prepared for smalahove, a traditional delicacy from the western part of the country which is basically just a boiled sheep’s head. The sheep’s head is cooked for several hours, and served with mashed potatoes and rutabagas.
Typically, you should eat the ears and eyes first — they’re the fattiest parts of the dish and are best eaten hot — before moving on to the tongue and brain. Wash it all down with a refreshing glass of akvavit, a festive spiced liquor.
