2. Crème brûlée
This dessert is a French bistro staple and seems much more complicated than it actually is because of the crunchy, caramelized sugar top. At its heart, it’s simply a dish of custard that’s been given an elaborate topping.
To make the best crème brûlée, you’ll need the freshest cream you can find, and make sure to use a real vanilla bean, rather than vanilla extract. Real vanilla beans lend the dish a nuanced, complex flavor that simply can’t be replicated with fake vanilla extract. Once the custard is done, you’ll need a blow torch to caramelize the sugar topping, which makes a fabulous show at the end of a meal.
