Trattoria Marsupino – Briaglia
Located in the tiny town of Briaglia, which is about halfway between Turin and Genoa, this tiny trattoria has seen its fair share of visitors who travel for hours to sample the amazing cuisine that comes out of the Trattoria Marsupino kitchens. They’re known for their long history of inventive cuisine that plays with tradition, including gorgeously golden strands of tajarin (tagliolini) noodles made with a shocking number of egg yolks, lightly sauced, and covered in shaved truffles. Their plates may be smaller than the average trattoria, but every bite is heaven.
