6. Okonomiyaki
Okonomiyaki is often translated into English as “as-you-like-it pancake”, which literally reflects the process of ordering the dish. At its core, okonomiyaki is made of an egg batter and shredded cabbage. Then, customers can personalize their order with ingredients of their choice, which are either cooked with the batter (Hiroshima style), or cooked separately and added later (Kansai style). There are even restaurants where the batter and toppings are provided, and diners cook the dish themselves!
