Weißwurst
Germans love their wurst (sausage). This is an indisputable fact. They’re served everywhere, from the simplest food carts to the most upscale fine-dining establishment. There are tons of different varieties of sausage, which originate in different parts of Germany.
One traditional variety is weißwurst, which just means “white sausage” in English. It’s made with veal and back bacon, and flavored with a variety of spices including cardamom, parsley, and lemon. Weißwurst was traditionally made without preservatives, which meant that people would have to eat them before noon or they would spoil. The lack of preservatives is what makes these sausages turn white when they’re cooked.
